power puffs!

These power puffs are so puff-tastic!  I highly recommend them.  I have never used millet before and I will certainly be using it more often.  It’s fluffy, light and has more protein than puffed rice.  These little power puffs are a perfect snack with a hot cuppa joe. You can easily cut this recipe in half if you aren’t trying to feed an army.

These are so good that my husband brought them to his Tai Chi class this morning and vanished with a request for more next week…I highly suggest you give these a whirl.

Makes 36-40 Power Puffs

Ingredients

4 cups puffed millet cereal
2/3 cup raisins
2/3 cup dried cranberries
1/2 cup peanuts, chopped (or nut of choice)
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 cup peanut butter (or other nut butter)
1 cup brown rice syrup
1-2 teaspoon pure vanilla extract
salt if desired

Directions
1. In a medium bowl, mix cereal, raisins, cranberries, nuts, pumpkin seeds, and sunflower seeds.

2. In a small saucepan, combine peanut butter and brown rice syrup. Cook over low heat for 1 to 2 minutes, stirring occasionally until warm and bubbly. Remove from heat and stir in vanilla. Pour over cereal mixture and stir until thoroughly coated.

3. Wait until cooled slightly, the peanut butter mixture can get very hot, then mold into balls (the size of golf balls). Transfer mixture to a cookie sheet to continue cooling.

Tip – it helps to dampen hands, this mix can get very sticky.

1 T sunflower seed butter
1 T chia seed
1 T flaked or shredded coconut
1 T dried cherries

Ingredients:

1 T lavender simple syrup
1 T sunflower seed butter
1 T sunflower seeds

Directions:

Mix all ingredients together and enjoy!

sunflower chia raisin

This morning I chose to be on the safe side and go with a few ingredients that I already know and love.  On Saturdays I have the luxury of taking two fitness classes at my gym, back to back.  So, this morning I wanted to be fueled and ready for a great day.

Ingredients:

1 C cooked oatmeal
1 T sunflower seed butter
1 T agave
1 T chia seeds
1 T raisins

Directions:

Mix oatmeal and sunflower seed butter with agave and raisins.  Enjoy!

sunflower pistachio

I definitely wanted seconds this morning…

Ingredients:

1 C cooked oatmeal
1 T sunflower seed butter
1 T agave
1-2 T roasted salted pistachios

Directions:

Mix oatmeal and sunflower seed butter with agave and half of the pistachios.  Garnish with remaining pistachios.  Enjoy!

mOMent: Listen to your body today.  What is it telling you right now, at this moment?  Tune in to the different organs, muscles and bones… Does it need rest?  Or could it use a little invigoration?  Thirty seconds spent listening to your body can change your entire day.  I suggest you do it.

sunflower prickly pear

A little bit of crunch, a little bit of sun and a little bit of sweet.  Yum!

Ingredients:

1 C cooked oatmeal
1 T sunflower seed butter
2 t prickly pear syrup
1 T raw sunflower seeds

Directions:

Mix prickly pear syrup, sunflower seed butter and half of the sunflower seeds with oatmeal.  Garnish with remaining seeds and enjoy!

Chia pets!  Yep, I still love them even if I could never get one to actually grow like they do in the commercials.  Now I love them for a different reason. They add healthy nutrition to my om of the day!  This is a healthy (and a little sweet) but very satisfying morning snack.  Enjoy…

Sunflowers aren’t only pretty, they make pretty tasty seeds!  This is the first time I’ve tried Sunflower seed butter, and it’s really delicious…

Ingredients:

1 C cooked oatmeal
1 T sunflower seed butter
2 t agave

Directions:

Mix seed-butter, agave and oatmeal.  Mix well and eat!

Ingredients:

1 C cooked old-fashioned oats
2 T lavender simple syrup
2 T sunflower seeds

Directions:

Add seeds and syrup to a small saucepan and heat over med-low heat for 3-4 minutes or until the seeds start to change color.

Ren-oaty Granoly Cookies

I decided to re-create a cookie I once had in Sonoma from a cute little coffee shop.  It was this fantastic oat-based cookie with honey and nuts and seeds.  It was filling and tasty, but not vegan.  So I thought I would try it at home with my modifications.  I’m very, very pleased with how they came out.  Please try this at home.

Servings: 24

Ingredients:

2 1/2 C old fashioned oats
1/2 C butter
1/2 C brown sugar
1/4 C brown rice syrup
1 t vanilla
1 T sesame seeds
1 T pumpkin seeds
1 T sunflower seeds
1 T shredded coconut (unsweetened)
1 T ground chia (or flax) plus 3 T water
1/4 C cranberries

Directions:

Pre-heat oven to 375 degrees.

In a large bowl cream butter and sugar together, add brown rice syrup and vanilla until mixed well.

Add oats and salt.  Fold in pumpkin seeds, sunflower seeds, sesame seeds, cranberries and coconut. Mix well.

Finally add the “chia egg” by mixing 1 T ground chia (or flax) with 3 T water.  Add to the mixture and stir completely.

Spoon mixture into well greased or non-stick mini-cupcake tins.

Bake for 25 minutes or until golden brown.  Remove from oven and let cool completely or they may tear apart easily.

Ahhhh…delicious…

chia pet for breakfast?

No not really a chia pet for breakfast, but chia seeds are one of the main ingredients in this next recipe.  Chia seeds are very high in essential fatty acids, even more than flax!  This recipe also uses goji berries which have gained some popularity over the past few years and have immune boosting properties.   And, who doesn’t love a good sunflower seed or two?

Ingredients:

1 C cooked old-fashioned oats
1/4 C sunflower seeds
1/4 C goji berries
1 T chia seeds
1 T grapeseed oil
1 T ginger simple syrup
1/4 t cinnamon
salt to taste

Directions:

In hot water soak goji berries and sunflower seeds for at least 10 minutes.

Heat oil and simple syrup in a saucepan over medium heat.  Add cinnamon and chia seeds, simmer/toast for about a minute.  Drain goji and sunflower seeds, add to saucepan.  Simmer mixture for 7-10 minutes or until most of the moisture has evaporated, remove from heat.

Add goji-chia-sunflower mix to oatmeal and enjoy!
