strawberry socca

This socca bread is meant to be a healthy treat. High in protein and naturally sweetened it is a perfect weeknight yummy for you and your hunny.

Ingredients:

1 pint of strawberries (or more!), sliced

1 c garbanzo flour

1 c water

1 t vanilla

salt to taste, can be omitted

Directions: Heat oven to 350 degrees. Mix flour and water together until no lumps remain. Add in vanilla and salt, if using. Stir in about half of the strawberries in the mixture and pour into a parchment lined (or sprayed with cooking spray) pie dish. Place remaining strawberries on the top of the mixture for adornment.

Bake for 30-45 minutes or until the socca bounces back slightly when pressed.

Let cool, and enjoy this healthy treat.

Strawberry Anzac!

Anzac cookies are probably one of my favorite cookies! The richness of coconut, the depth of Lyle’s golden syrup all held together with oats, flour and sugar…oh yeah, and your favorite non-dairy butter too! How incredibly delicious this mixture is.

All I can say is THANKS AUSTRALIA for coming up with a perfect cookie.  Australians call these cookies biscuits and they were developed during the first World War for the soldiers.  They were perfect for travel because they do not contain milk or eggs, which means the soldiers had a yummy way to have sustenance while away.

The one secret ingredient is Lyle’s Golden Syrup.  I found mine at a local store that has an international section.  Look where you might find ingredients from the UK, you will likely find this sweet gem.

There’s only one way it could get better…add fruit! So which fruit goes well with coconut and oats? My pick is strawberry. I originally planned on making homemade strawberry jam but then got impatient (big surprise for those who know me) and bought a jar of organic strawberry preserves instead. I suppose that for this recipe you could use homemade jam and it would add another layer of deliciousness.

I made two versions of this mixture:

1. Strawberry Thumbprint Anzac Cookies
2. Strawberry Anzac Crumble

Strawberry Thumbprint Anzac Cookies

These cookies are sweet, rich and the texture is a little chewy, a little soft…and A LOT delectable.

The recipe is fairly straightforward:

1 C rolled oats
3/4 desiccated coconut (I use unsweetened)
1 C white flour
1 C sugar
125g (4oz) Earth Balance (1 stick)
2 T Lyle’s golden syrup
1/2 t baking soda
1-3 T water
1 10 oz. jar of strawberry jam or preserves

Directions:

Preheat oven to 300F

1. In a big bowl, mix oats, flour, sugar & coconut together.
2. In a little bowl, melt syrup and butter together.
3. In a baby bowl, mix soda with 1 T boiling water. Add to melted butter and syrup. Then add that to the dry ingredients. Mix together, add a little extra water if it seems really dry.
4. Place 1 T of mixture on parchment paper lined cookie sheets (allow room for spreading). Flatten with fingers just slightly and add a small spoonful of jam to the top of each cookie. Sprinkle with coconut as a garnish if desired
5. Bake for 20 minutes, checking periodically. These cookies have a tendency to brown really fast.
6. Let cool completely and devour.

Strawberry Anzac Crumble

Ok – this recipe was stumbled upon by mistake but will certainly be resurfacing in my house as a favorite. First make a batch of the Anzac cookie dough and gather any ramekins (I used 8-10 oz. ramekins). Depending on how large your ramekins are and how much jam you use, the measurements will vary. Have fun

Ingredients:

1 batch of Anzac Cookie Dough
Strawberry Jam
Dessicated coconut for garnish
Fresh strawberries (about one strawberry per ramekin)

Directions:

Preheat oven to 300 degrees

1. Prepare one batch of Anzac Cookie Dough
2. Layer about 1/4 inch of cookie dough in the bottom of ramekin. Press into the bottom of the ramekin.
3. Spread a thin layer of strawberry jam over the dough.

4. Add another layer (about 1/4 inch) of Anzac dough, but don’t press the dough down too much. The mixture will not completely fill the ramekin, but it will rise.

5. Garnish with strawberries and coconut.
6. Bake for 20-40 minutes depending on how gooey and delicious you like your crumbles. About 30 minutes will get you a nice browned edge with a soft berry-licious center.
7. Let cool, it will stay hot for quite some time. Enjoy…

kitchen sink

This morning I let my hubby do his own om of the day. I was a bit tired and just wasn’t very creative. So…he was! He put everything but the kitchen sink in his, and he tells me that he may have gone a little overboard. It might have been a bit too sweet he says, but he finished every last drop. He used mosto which was brought to us by our lovely friend and has a bit of a sweet vinegar taste…Interesting to say the least.

Ingredients:
1 cup oatmeal
1/4 t mosto
1 T lemon curd
1 T strawberry sauce
3 strawberries
butter to taste

Directions: Mix together and enjoy!

strawberries, brown sugar, chia & pom

This one just looks so pretty. And it’s pretty darn fantastic to mow down in the morning too. Love chia seeds!

Ingredients:
1 cup cooked oatmeal
3-4 strawberries, sliced
1 T brown sugar
1 T chia
1 T Trader Joe’s pomegranate seeds, dried

Directions: Mix together and enjoy!

mOMent: Doing good for others is very rewarding, but start with yourself first. How can you do that today?

strawberry & cinnamon sauce

Strawberries and cinnamon? Yep, you bet. And what a yummy mix of fall and summer…


Ingredients:
1 cup cooked oatmeal
1-2 T cinnamon sauce
5 strawberries
2 T water

Directions: Cut strawberries into bite sized pieces and simmer over low heat with cinnamon sauce and water until reduced to a sauce. Mix with oatmeal and enjoy!

Ingredients:

1 C cooked old-fashioned oats
1/2 C fresh strawberries
1 1/2 T brown sugar
1-3 t brown sugar for garnish
1 T water
2 T cream (I used soy creamer)

Mix strawberries water and brown sugar in a small sauce pan. Let simmer over low heat for 5 or more minutes, until the consistency becomes thick and gooey with chunks of strawberry.

Add strawberry mix to the bowl with oatmeal and milk/cream, stir well.  Sprinkle with brown sugar.

strawberry pomegranate

Ahh, we’re back home after an amazing trip up to Mt. Shasta and what a wonderful way to start the day than with some strawberry pomegranate om.   Have you tried these amazing dried Pomegranate seeds from Trader Joe’s?  If not, I highly recommend them…they are scrumptious.

Perfecto!

Ingredients:
1 C cooked oatmeal
2 T dried Trader Joe’s pomegranate seeds
1-2 T Kozlowski farms strawberry sauce

Directions: Mix all ingredients together and enjoy!

cold fruity yumminess!

Well this morning it’s still hot from yesterday’s heat and I thought some cold fruity yumminess was in order.  So, this om of the day uses ingredients ice-cold from my fridge.

Ingredients:

1 C cooked oatmeal
1 blackberry peach verjus
1 t earth balance
1 t creamer
1 T strawberry sauce

Directions:

Stir in earth balance and creamer with oatmeal.  Add strawberry sauce and verjus, mix well!

mOMent: Studies say that screens such as computer monitors and televisions, cell phones and ipads can cause our brains to fatigue.  It is healthy and beneficial to get outside and rest that sweet brain of yours.  Consider taking a walk today with that intention, rest, recharge and recuperate…your brain will thank you.

sunflower strawberry chia

Chia pets!  Yep, I still love them even if I could never get one to actually grow like they do in the commercials.  Now I love them for a different reason. They add healthy nutrition to my om of the day!  This is a healthy (and a little sweet) but very satisfying morning snack.  Enjoy…

Ingredients:

1 C cooked oatmeal
1 T chia seeds
1 T strawberry sauce & syrup
1.5 T sunflower seed butter
dash of salt to taste

Directions:

Mix all ingredients together and eat up!

dos strawberries

This morning I was in a mega-hurry and tossed this om of the day together in a flash. It turned out pretty delicious! I’m calling it dos strawberries because there is strawberry sauce as well as dried strawberries…Dueling strawberries :)

Ingredients:

1 C cooked oatmeal
1 T favorite milk
1-2 T strawberry sauce & syrup
1-2 t earth balance
2 T dried natural strawberries

Directions:

Mix all ingredients, except strawberries, together. Garnish with strawberries and enjoy!

mOMent: Have you ever been in a hurry and done things completely backward? Have you ever done things backward on purpose? Today do a few things backward, like brushing your teeth. Studies suggest that it is good for the brain (and fun too)!

strawberry cherry coconut

Yums!

Ingredients:

1 C cooked oatmeal
1-2 T coconut cream
1 T strawberry sauce & syrup
1-2 T dried cherries
1-2 T shredded coconut
2 T dried natural strawberries

Directions:

Mix oatmeal, strawberry sauce and coconut cream together. Garnish with shredded coconut and cherries, enjoy!

This is a delicious, creamy way to start the day. Depending on how creamy, coconutty or strawberry you like it, you can adjust the ingredients.

We like to go above and beyond around here so this morning I opted for 2 T of everything, which made for a very saturated om of the day. Yum!

Ingredients:

1 C cooked oatmeal
1-2 T coconut cream
1-2 T strawberry sauce & syrup
1-2 T shredded coconut

Directions:

Mix all ingredients together and enjoy!

strawberry key lime

Strawberry and keylime simple syrup are the basics of this om of the day…Pretty simple, and pretty fantastic.

Ingredients:

1 C cooked old-fashioned oats
4-5 strawberries
2 T key lime simple syrup

Directions: Simmer strawberries in key lime simple syrup until frothy & bubbly.  Strain syrup into oatmeal and mix well.  Top with strawberries.

blueberry strawberry lavender

Perfect combo…definitely try this at home.

Ingredients:

1 C cooked old-fashioned oatmeal
4-5 strawberries, quartered
1/3 C fresh blueberries
2T lavender simple syrup

Directions:

Simmer berries and simple syrup for 3-4 minutes until the syrup is purple/red.  Drain the juice/syrup in oatmeal and mix well.  Top om of the day with the berries! Yum!

1/2 C fresh strawberries
1 1/2 T brown sugar
1-3 t brown sugar for garnish
1 T water
2 T cream (So Delicious non-dairy creamer is what I used)

strawberry & blueberry

While visiting with family I was the lucky recipient of some delicious dried fruit.  Strawberries and blueberries dried and sweetened with cane sugar… They are heavenly.  This recipe uses that fruit and a little bit of agave.

1 C old-fashioned oatmeal

2 T dried blueberries

2 T dried strawberries

1 T agave

Directions:  Chop dried strawberries into bite sized pieces.  Sprinkle blueberries and strawberries over oatmeal and drizzle with agave.  Enjoy!

My friends stopped by with a fabulous gift of fresh homemade strawberry preserves.  This was such a treat and I knew right away that this slightly sweetened strawberry surprise was going in my om of the day…So here it is.  If you’d like to try this one at home, you’ll have to ask my strawberry preserves vendors, I have no idea…but it was delicious!
