pumpkin and nog icing (with a slice of banana bread)

For this recipe I used nog icing which I made from the horchata icing recipe that I’ve grown so fond of. You can find that here. Instead of using horcata Rice Dream, I used Silk Nog…it is delightful!

Ingredients:

1 C cooked oatmeal
1-2 T nog icing
1-2 T pumpkin puree

Directions: Mix all ingredients together and enjoy!

The taste of the holidays have arrived in my home.  Silk Nog and pumpkin were a welcome addition to my kitchen and yummy in the belly this morning!

Inspired by these delicious cookies that I made recently. I decided to use the same spices that were in these cookies…Yum!

Ingredients:

a few shakes of ginger
a few shakes of nutmeg
a few shakes of cinnamon
1 T molasses (to taste)

I had some leftover icing from some delicious Pumpkin Whoopie Pies that I made from Oh She Glows!  It certainly makes for a punkiny kinda brekie…

pumpkin cheesecake

This is a great way to start the day. Yes, yes…there’s a little sugar in the recipe, but that’s what’s so fun about it right? Besides, you’ll get a touch of protein from the Tofutti in the icing.

The icing recipe that I used is here. I just substituted Pumpkin Pie spice with the Cinnamon…it turned out oh so delicious, and mixed with the pumpkin it really does remind me of pumpkin cheesecake.


Ingredients:

1 C cooked oatmeal
1-2 T pumpkin cream cheese icing (to taste)
2-4 T pumpkin, canned (to taste)

Directions: Mix all together and enjoy!

I’m getting in the Pumpkin Spirit this Fall y’all.  It’s so filling and nutritious, and a great source of vitamin A.  Best of all, it is orange!  I love colorful foods, don’t you?

Ingredients:
1 C cooked old-fashioned oats
1 T toasted chopped pecans
1 T raisins
1/4 C pumpkin, canned
1 t agave or other sweetener of your choice

pumpkin apple cranberry

Ingredients:

1 C cooked old-fashioned oatmeal

2 t cranberry apple butter

1 t pumpkin butter

2 t dried cranberries

Directions: Mix pumpkin butter, cranberry apple butter and oatmeal well.  Garnish with dried cranberries.  Enjoy!

Ren-oaty Granoly Cookies

I decided to re-create a cookie I once had in Sonoma from a cute little coffee shop.  It was this fantastic oat-based cookie with honey and nuts and seeds.  It was filling and tasty, but not vegan.  So I thought I would try it at home with my modifications.  I’m very, very pleased with how they came out.  Please try this at home.

Servings: 24

Ingredients:

2 1/2 C old fashioned oats
1/2 C butter
1/2 C brown sugar
1/4 C brown rice syrup
1 t vanilla
1 T sesame seeds
1 T pumpkin seeds
1 T sunflower seeds
1 T shredded coconut (unsweetened)
1 T ground chia (or flax) plus 3 T water
1/4 C cranberries

Directions:

Pre-heat oven to 375 degrees.

In a large bowl cream butter and sugar together, add brown rice syrup and vanilla until mixed well.

Add oats and salt.  Fold in pumpkin seeds, sunflower seeds, sesame seeds, cranberries and coconut. Mix well.

Finally add the “chia egg” by mixing 1 T ground chia (or flax) with 3 T water.  Add to the mixture and stir completely.

Spoon mixture into well greased or non-stick mini-cupcake tins.

Bake for 25 minutes or until golden brown.  Remove from oven and let cool completely or they may tear apart easily.

Ahhhh…delicious…

crunchy punkin’

Pumpkin granola and pumpkin butter are at the core of this recipe.  Remember to eat your oatmeal right away or the granola won’t be as crunchy…and that’s part of the appeal to this om of the day…

Ingredients:

1 C cooked old-fashioned oats
1/2 C pumpkin granola
2 T pumpkin butter
1 t butter
pinch of cinnamon
salt to taste

Directions:

Mix pumpkin butter, butter and granola in the bottom of a bowl.  Add oatmeal and mix well.  Sprinkle with cinnamon and salt for flavor and garnish! Crunch it up!

The ingredients in this recipe have all of the perfect flavors for the winter seasons, pecans and pumpkin butter!  A crowd-pleaser for sure.

Ingredients:
