flax crusted pecans

These pecans were really tasty…and it made it even better that they were somewhat healthy. I thought it would be fun to try and crust pecans with some flax goop. So I did!

Ingredients for pecans:

1/4 C pecans
2 T flax meal
2 T water
1 T agave syrup
1 t cinnamon
a little salt

Directions:

Preheat oven to 350 degrees. Mix all ingredients above in a saucepan over medium heat. Cook until pecans are nicely gooped up :) . Place on a sheet pan and bake until toasted and a little crunchy (5-10 minutes). Let cool! Otherwise they might burn the roof of your mouth like they did mine. They will be slightly chewy…but I kind of like that.

Add to your om of the day with anything else that you might desire. A little almond milk? I liked it just plain with the pecans…

vanilla bean sugar pear pecan

Have I mentioned how much I love the vanilla bean sugar?!  Well, if I haven’t…I love it!  This delicious om of the day was a great combination and I will CERTAINLY eat this again…

Ingredients:

1 C cooked oatmeal
1 T vanilla bean sugar
2 T pecans, chopped
1 pear, chopped

Directions: Mix all ingredients together and simmer with a touch of water until warm and the pears are soft… Ladle on your om…enjoy!

apple cinnamon oat bars

This is a great recipe that I found in the Whole Foods flyer and I think they’re pretty good.  The only thing that I did differently was that I used a sheet pan and made them really thin…that way they make great sandwiches with some peanut butter in the middle!  Yums!


Ingredients:

2 cups unsweetened almond milk
1 1/2 cup steel cut oats
1/2 cup chopped pecans
1/2 cup raisins
2 tsp vanilla
1 1/2 tsp ground cinnamon
2 (about 1 lb) apples (I used Pink Lady and Gala apples), cored and grated

Directions:
Preheat oven to 350 degrees. Mix all ingredients together in a large bowl. Transfer to a foil- or parchment paper-lined 9″ square baking pan, press down and smooth out the top and bake until firm and golden brown, about 1 hour. Let cool in pan; cut into squares and sere warm or at room temperature.

Silk nog, maple syrup and pecans!

Ingredients:

1 C cooked old-fashioned oats
2 T maple syrup (or to taste)
¼ C pecans
¼ C silk nog

apple raisin pecan pie

Yeah, pretty much this is the bomb! YUM!


Ingredients:

1/4 C oatmeal
4-5 big apples, chopped
handful of pecans
1/3 C brown sugar
2 T maple syrup
1/3 C raisins
1 t cinnamon
1 pie crust

Directions:

Mix all ingredients in a big bowl and add to pie crust. Bake at 350 degrees for about an hour or until it looks ready to devour…

Cranberry Pecan Oatmeal Cookies!

These cookies are one of the standards of our Christmas baking celebrations. They are crispy on the outside and soft on the inside. The crunchy pecans and tart-sweetness of the cranberries really make a complex and well-rounded flavor and texture. They are really, really delicious!

Makes about 48 cookies
2 C all purpose flour
1 t baking soda
½ t baking powder
½ t salt
1 C (2 sticks) Earth Balance, room temp
1 C granulated white sugar
1 C packed brown sugar
2 flax eggs (2 ½ T flax meal 6 T water)
1-3 t vanilla
1-2 pinch cinnamon (or ½ t? ish)
1 pinch nutmeg
2 C oats
1 C dried cranberries
1 C chopped pecans

1. Heat oven to 400 degrees.
2. Mix flax and water in a separate dish and let gel up.
3. Combine flour, baking soda, baking powder, salt and spices.
4. Beat Earth Balance in a bowl until softened (but not liquidy). Beat in flax eggs until well combined.
5. Beat in vanilla.
6. Beat in sugar.
7. Mix in flour with rubber spatula.
8. Mix on low for 5 seconds. Batter will be thick.
9. Stir in oats, cranberries and pecans.


10. Drop by the rounded tablespoon onto parchment cookie sheet, roll into balls and place 2-inches apart. (Try to keep the dough cool in between baking sessions, I keep mine in the fridge)
11. Cook 11 minutes, until golden brown.
12. Cool cookies on sheets for 1-2 minutes then transfer to cookie racks and cool completely (or eat while hot!)

toasted maple pecans

Maple and pecans are such a great combination… Having these nuts around the house is a treat I love to have.

Ingredients:

1 C cooked oatmeal
2 T maple toasted pecans
1-3 t earth balance

Directions: Take equal parts pecans and maple syrup and toast in an oven of 350 degrees until you can just smell it…just a few minutes. Remove from oven and let cool before adding to your oatmeal. Mix all ingredients together and chow down!

I had some leftover icing from some delicious Pumpkin Whoopie Pies that I made from Oh She Glows!  It certainly makes for a punkiny kinda brekie…

1-2 T chopped pecans

1 t agave or other sweetener of your choice

cinnamon pom pecan

Around my house we just can’t get enough of Trader Joe’s dried pomegranate seeds.  We just LOVE them!  Here’s another easy and yummy recipe featuring such a delightful treat…

Ingredients:
1 C cooked old-fashioned oats
2 T pecans
2 T Trader Joe’s dried pomegranate seeds
1 t oil
1-3 t sugar, agave or other sweetener of your choice
1 t cinnamon (or more!)

Directions: Mix all ingredients except oatmeal in a saucepan over medium heat. Heat for just a few moments, or until the pecans become slightly fragrant. Let cool, and add to your om!

chunky apple pie

Sorry folks, I don’t have a recipe for the apple pie.  I just chopped up about 6 apples, mixed them with a handful of pecans, a handful of brown sugar, a spoonful of cinnamon and a handful of raisins.  I mixed it all together and put it in a pre-made frozen pie crust.  I baked it until it was done, about an hour at 350 degrees.

Ingredients:

1 C cooked old-fashioned oats

1 healthy scoop of homemade apple pie

Directions:  Scoop on top and dig in!

dried cherries, white chocolate peanut butter & pecans

My Hubster loves cherries so i couldn’t resist throwing a few his way this morning… A bit tart and a bit sweet, blends well with the other flavors of this om of the day.


1 T dried cherries
1 T white chocolate peanut butter
1 T pecans
1-3 t agave (to taste)

Directions: Mix all ingredients together, or if you like you can garnish with a few extra cherries.

mOMent: ‘Blending in’ can be quite a difficult job sometimes, especially if you’ve been conditioned to set yourself apart from those around you. Try it once or twice today and see how you feel…

pecan, dried cherry, dried pomegranate & (honey)

I say (honey) because many people who choose not to eat animal derived ingredients will not use honey.  So, for those people I encourage the use of brown rice syrup and/or agave as substitutes.  I love this combination of flavors, it’s a very wholesome taste.

Ingredients:
1 C cooked oatmeal
2 T dried Trader Joe’s pomegranate seeds
1 T pecans, chopped
1-2 T dried cherries
1-3 t honey, agave or brown rice syrup

Directions: Mix all ingredients together and enjoy!

cranberry pecan whole wheat oat bread

This recipe was adapted from a recipe I found which uses honey and regular milk.  I substituted with vegan options the first and found that it was moist, delicious and earthy.  This time I added cranberries and pecans, yum!  I used almond milk and coconut oil instead of soy and canola, it gave an extra umph that I truly enjoyed.

Also, the first recipe asks to grind the oatmeal, and this time I didn’t.  I think it added more structure to the bread and was a nice change.

Ingredients:

1 C rolled oats
1 C whole wheat flour
2 t baking powder
1/2 t salt
1 T plus 1 t agave syrup
1 T coconut oil
1 C almond milk

Directions:

1. Preheat oven to 450 degrees F (230 degrees C).

2. Grind oatmeal in a food processor or blender. In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve agave in vegetable oil then stir in the soy milk. Combine both mixtures and stir until a soft dough is formed. Form the dough into a ball and place on a lightly oiled baking sheet.

3. Bake in preheated oven for about 20 minutes, or until bottom of loaf sounds hollow when tapped.

Ingredients:

1 C cooked old-fashioned oats
1/4 C walnuts
1/4 C toasted pecans
2 T cashews
1 T almond butter
1 T peanut butter
1 T agave
a few almonds for garnish

Directions:
Mix all ingredients in a bowl (except for almonds) until well combined.  Add a few almonds to the top for garnish…Enjoy being nuts!

mOMent: Have you ever thought about what a nut really is? It is technically the fruit of the plant from which it comes.  Yet, most of the time nuts are in hard shells to protect the fruit.  Perhaps that’s why the saying “He’s a tough nut to crack” applies to people who are not forthcoming with their emotions.  Do you have anyone in your life who is a “tough nut to crack”?  If you do, how do you relate to them, communicate with them and interact?  How have you been a “tough nut to crack”?

toasted pecan & blueberry

Ingredients:

1 C cooked old-fashioned oats
1/3 C frozen blueberries
1/3 C toasted pecans
2 T agave
1 t butter
2 T milk (I used almond)

Directions:
Over low-medium heat combine blueberries, pecans and agave for 3-5 minutes or until everything is heated thoroughly.  Add mixture to oatmeal in a bowl, add butter and milk and mix until just perfect for you…

This recipe was originally from a VegNews recipe. The only alteration I made was that I added more salt (because I like my cookies salty).  They were a huge hit!

Makes 8 large or 16 small

What You Need:

* 1 cup whole wheat pastry flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 2/3 cup unbleached sugar
* 2/3 cup non-hydrogenated shortening
* 2 tablespoons molasses
* 1/2 teaspoon vanilla
* 1 tablespoon flax meal + 3 tablespoons water mixed together
* 1 cup rolled oats
* 2/3 cup dried cranberries
* 2/3 cup chopped pecans
* 1/2 cup chocolate chips
* 1/4 cup unsweetened shredded coconut

What You Do:

1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a thin layer of oil.
2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. In a separate bowl, cream together sugar and shortening. Add molasses, vanilla, and flax mixture to creamed shortening and mix well. Combine the dry ingredients with the wet and mix together.
3. Fold in oats, fruit, nuts, chocolate chips, and coconut. If dough is too stiff to stir, add as much as 1 tablespoon of water.
4. Measure cookies out with a heaping tablespoon and flatten slightly. Bake for 12 to 14 minutes or until lightly brown at edges. Store in a covered container to keep chewy.
