We were pleasantly surprised when visiting our friends the other evening and they offered some fresh blackberries from their backyard. I took them up on the offer and was quite happy when I realized that I had worn my boots, it made stomping through prickly vines that much easier. Nevermind that half of the container was gone before we returned home…These blackberries pair nicely with the peaches and verjus in the reduction. Yum!
Ingredients:
1 C oatmeal
2 T (or more) reduction sauce
2 spoonfuls of fruit from reduction
Reduction:
1 C fresh picked blackberries
1/2 C sliced peaches
1 C sugar
1 C Navarro Verjus (or any tart juice)
Directions: Simmer sugar, fruit and verjus for about 20 minutes (or longer, depending on how saucy you like your reduction).
Add sauce to oatmeal and mix well. Garnish with fruit and enjoy!
