hazel-bites

I saw this recipe and knew immediately that I needed to make it.  So here it is, with my adaptations…

Ingredients:

Bites:
120 g dates
240 g hazelnuts
40 g chocolate chips, melted
40 g cocoa
1/2 c maple syrup plus 2 tsp
1 t vanilla
1/4 t salt

Icing:
20g cocoa powder
1/4 c maple syrup
120 g avocado

Toasted Hazelnuts
40 g hazelnuts
1 T maple syrup
pinch of salt



Directions:

Pulse 240g (2c) hazelnuts in food processor until it’s finely ground, like a flour. Add dates, 1/2 c maple syrup (plus 2 tsp extra if dough seems dry), 40g (1/2 c) cocoa powder, melted chocolate chips, vanilla and salt (to taste). Process dough until it become sticky and thick.

Transfer dough into an 8 x 8 pan and spread out into an even layer. Cut into even pieces so it will be easy to layer with the icing.

Mix 40g (1/3 c) chopped hazelnuts with 1T maple syrup and a pinch of salt. Place in 300 degree oven until slightly toasted. Keep an eye on these, they will burn quickly once they are done. Set aside to cool while making icing.

To make the icing blend the avocado (1 medium) with 20g (1/4 c) cocoa powder and 1/4c maple syrup and 1/4 t vanilla. Blend until smooth.

Assemble the bites by spreading icing on bottom layer, adding the second bite, layering more icing and finally topping with the toasted hazelnuts.

Ingredients:

1 C cooked old-fashioned oats
2 T maple syrup (or to taste)
¼ C pecans
¼ C silk nog

Directions:

Mix all ingredients together and enjoy!

Pear and Maple Caramel Om of the Day…

2 T maple caramel with chopped pears, over low heat…

Simmer until melted and yummy!

So you  know the other day when I shared the vegan maple caramel recipe?  And then after that there was the maple pistachio recipe?  Well…today I just added the maple pistachios plus a touch of maple syrup to the om of the day. 

 

Ingredients:

1 C cooked oatmeal
1/3 C maple pistachios
2 t maple syrup

Directions: Mix maple syrup and oatmeal, top with maple pistachios. Mix it up and enjoy!

Who knew?  Well, I had a suspicion that it would work, or at least be worth an om of the day.

heat until sauce infuses the pineapple

Add to your om!

Ingredients:

1 C cooked oatmeal
1/3 C baby pineapple
1 T maple caramel

Directions: Heat pineapple and maple syrup until pineapple plumps up a little and the sauce is nice and toasty. Add to oatmeal. Mix it up and enjoy!

I used this recipe from Oprah’s website.  The only change I made was the butter.  I substituted Earth Balance for the butter and I have to say this recipe rocks.  For me, the sauce is more solid at room temperature but as soon as it is heated up it’s perfect for drizzling and enjoying on most things.

Maple Caramel Sauce

Servings: Makes about 3 cups (three 8-ounce jars)

Ingredients

1/2 pound (2 sticks) unsalted butter
2 cups packed light brown sugar
1/2 tsp. salt
1 cup pure maple syrup

Directions
In a medium saucepan over medium-high heat, melt butter. Add sugar and salt. Cook, stirring constantly, until sugar is completely dissolved, then adjust heat to medium and boil 2 minutes longer. Add maple syrup and boil, stirring frequently, until sauce is thick, smooth, and coats a spoon, 2 to 4 minutes longer. Remove from heat and cool slightly. Pour into heatproof decorative jars and cool completely. Refrigerate in tightly sealed jars for up to 2 months.

Some like it hot! Like my hubby…so I thought, what better way to celebrate the cold chill in the air than with a little spicy breakfast? This om of the day was gone in a flash!

Ingredients:

1 C cooked oatmeal
2 T maple syrup
1 pinch of cayenne

Directions: Mix it up and enjoy sweet spice!

Maple and pecans are such a great combination… Having these nuts around the house is a treat I love to have.

Ingredients:

1 C cooked oatmeal
2 T maple toasted pecans
1-3 t earth balance

Directions: Take equal parts pecans and maple syrup and toast in an oven of 350 degrees until you can just smell it…just a few minutes. Remove from oven and let cool before adding to your oatmeal. Mix all ingredients together and chow down!

Applewood smoked almonds are such a treat and soooo delicious.  They remind me of being by a campfire and when mixed with real maple syrup it hits the spot for a sultry sweet morning…

Maple syrup is one of my absolute favorite ingredients. It has so many notes of flavor I get giddy just thinking about how it makes my mouth jump for joy! Add in a little coconut milk and voila! A perfect autumn om of the day…

I’m a huge fan of maple syrup.  The rich earthy flavor and the sappy goodness are a huge hit in my house. Add a few delicious macadamia nuts and you have yourself a grand slam!

Ingredients:

1 C cooked old-fashioned oats
1 T maple syrup
1 t butter
2 T chopped macadamia nuts

Directions:  Mix all ingredients together and let the warm goodness

Ingredients:

2 T maple syrup
1 T brown sugar
1.5 T butter
2-3 T cream
Sprinkle of cinnamon

Directions:  Mix all ingredients in a bowl and wish yourself a happy birthday!

Ingredients:

1 C cooked old-fashioned oats
2 t maple syrup
1/2 t vanilla
1/2 t cinnamon
1 pinch nutmeg
sat to taste
11 raisins

Directions:

Combine maple syrup, vanilla, raisins, salt and spices, mix well.  Add oatmeal and mix completely.  Enjoy!

Ingredients:

1 C cooked old-fashioned oats
1 T maple syrup
1/4 C toasted pecans
1 T butter (or to taste)
1 T cream (or to taste)
salt

Directions:

Spread pecans on small baking sheet and place in preheated oven (400 degrees) and toast until fragrant.  Let cool.

Add butter, cream, salt pecans and maple syrup to a bowl.  Stir well, add oatmeal until butter is melted and all ingredients are combined well.

maple pistachios

I love the new maple caramel that I made and I thought it would go perfectly with pistachios.  So I made some!

Ingredients:

2 T maple caramel
1 cup pistachios

Directions: Heat oven to 350. Spoon maple caramel on a sheet pan with pistachios (I lined the sheet pan with parchment) and bake for 3-5 minutes. Remove from oven and stir the pistachios, mixing the caramel well with the nuts. Return to oven for about another 10 minutes, keeping an eye on them so they don’t burn. Let cool completely and transfer to a jar.
