hazel-bites

I saw this recipe and knew immediately that I needed to make it.  So here it is, with my adaptations…

Ingredients:

Bites:
120 g dates
240 g hazelnuts
40 g chocolate chips, melted
40 g cocoa
1/2 c maple syrup plus 2 tsp
1 t vanilla
1/4 t salt

Icing:
20g cocoa powder
1/4 c maple syrup
120 g avocado

Toasted Hazelnuts
40 g hazelnuts
1 T maple syrup
pinch of salt



Directions:

Pulse 240g (2c) hazelnuts in food processor until it’s finely ground, like a flour. Add dates, 1/2 c maple syrup (plus 2 tsp extra if dough seems dry), 40g (1/2 c) cocoa powder, melted chocolate chips, vanilla and salt (to taste). Process dough until it become sticky and thick.

Transfer dough into an 8 x 8 pan and spread out into an even layer. Cut into even pieces so it will be easy to layer with the icing.

Mix 40g (1/3 c) chopped hazelnuts with 1T maple syrup and a pinch of salt. Place in 300 degree oven until slightly toasted. Keep an eye on these, they will burn quickly once they are done. Set aside to cool while making icing.

To make the icing blend the avocado (1 medium) with 20g (1/4 c) cocoa powder and 1/4c maple syrup and 1/4 t vanilla. Blend until smooth.

Assemble the bites by spreading icing on bottom layer, adding the second bite, layering more icing and finally topping with the toasted hazelnuts.

What is haroset you ask?  Well I didn’t know either until we happened upon it recently in a delightful store called Wholesome Market.  Haroset is a spread made of nuts and fruit, and the one that we found was made with hazelnuts, apples and dates.  It is soooooo delicious!  What a score.  It’s perfect on toast, oatmeal or even by the spoonful straight to the lips…


Ingredients:

1 cup oatmeal
1-2 spoonfuls of haroset

Directions: Stir together and enjoy!

Who doesn’t love a little hazelnut?

Ingredients:

1 C cooked oatmeal
1 T hazelnut chocolate spread
1 T chopped hazelnuts
1 T whole hazelnuts

Directions: Mix all ingredients together except whole nuts. Garnish whole nuts on top of oatmeal….Enjoy!

Why yes, those are chocolate balls.  Hazelnut chocolate balls be exact.  I’ll have the recipe up soon…but this made a delectable om of the day.  Yum!

Directions:  2 Hazelnut truffles melted and mixed in om…perfect!

So I was fortunate enough to get a sample of this hazelnut butter which is DELICIOUS. It’s so yummy…almost as good as Nutella. Yep, I said it! All you vegans out there who miss Nutella…go grab some of this amazing hazelnut butter, you will not be disappointed.

Ingredients:
1 C cooked old-fashioned oats
1 package of Justin’s Hazelnut Butter
2 T chopped hazelnuts

Directions: Mix all together and enjoy!

While we journeyed through Oregon, we stopped at this great little art fair in Jacksonville, OR.  We found this booth selling cinnamon spiced nuts. She made them without oil!  They were delicious and well deserving of being put in our om of the day.  Mmmmm…

Ingredients:

1 C cooked oatmeal
2 T yummy cinnamon hazelnuts
1 T Trader Joe’s pomegranate seeds, dried

Directions: Find a cup and spoon, mix it up and enjoy!

blueberry hazelnut

I used dried blueberries for this recipe.  Although, I’m sure you could use fresh berries and omit the water from the recipe.  However, I really enjoyed the ‘raisin-like’ texture of the blueberries after they had simmered with the agave nectar and water.  I enjoyed this mix and I think you will too!

Ingredients:

1 C cooked old-fashioned oats
2 T dried blueberries
2 T chopped hazelnuts
2 T agave
2 T water
1 t grapeseed oil

Directions: Add blueberries, hazelnuts, agave water and grapeseed oil to a saucepan over medium heat.  Let simmer until blueberries plump with the agave nectar.  Set aside and let cool for a minute.  Mix with oatmeal and enjoy!

easy homemade granola

This is one of the best recipes I have ever had.  It was so good that my husband was a little upset when I gave away our last bag of the granola to visiting family members.  I have to admit that I used this recipe because one of the recipe maker’s names is Renato…It was a sign, right?

Easy Homemade Granola
from “Baked: New Frontiers in Baking” by Matt Lewis and Renato Poliafito

Ingredients:
2 cups rolled oats
1 teaspoon cinnamon
1 teaspoon salt
3 tablespoons plus 1 teaspoon vegetable oil
1/4 cup honey (I used brown rice syrup)
1/4 cup firmly packed light brown sugar
1 teaspoon pure vanilla extract
1/3 cup whole almonds
1/3 cup whole hazelnuts
1/3 cup golden raisins (I used thompson raisins)
1/3 cup dried cherries (I omitted these, as I had none in the house)

Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper.

In a large bowl, toss the oats with the cinnamon and salt.

In a medium bowl, stir together the oil, honey, brown sugar, and vanilla. Whisk until completely combined.

Pour the honey mixture over the oats mixture and use your hands to combine them: Gather up some of the mixture in each hand and make a fist. Repeat until all of the oats are coated with the honey mixture.

Pour the mixture onto the prepared baking sheet. Spread it out evenly, but leave a few clumps here and there for texture.
Bake for 10 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the almonds over the granola and return the baking sheet to the oven.

Bake for 5 minutes, then remove from the oven and use a metal spatula to lift and flip the granola. Sprinkle the hazelnuts over the granola and return the baking sheet to the oven.

Bake for 10 minutes, then remove from the oven. Let cool completely. Sprinkle the raisins and cherries over the granola…

Ingredients:

1 C cooked old-fashioned oats
1/4 C chopped candied hazelnuts
a little salt

Directions:  Mix all ingredients together and chow!

The recipe

Ingredients:

3 tablespoons grapeseed oil
6 tablespoons agave nectar
2 cups hazelnuts (de-skinned)
½ teaspoon celtic sea salt
½ teaspoon cinnamon
½ teaspoon nutmeg

1. In a large skillet, heat oil and agave until bubbling
2. Add pecans and stir until they are well coated, then mix in salt and
seasonings
3. Cook for 4 minutes, then remove pan from heat
4. Place nuts on a parchment lined baking sheet
5. Place sheet in a 400° oven and roast for 4 minutes, remove from oven
and cool completely
