I really get so excited knowing that the combinations for om of the day are endless!  I looked in my cupboard this morning and realized that I had this great combo at my hand…pistachio perfection!

Ingredients:

1 C cooked oatmeal
1/2 banana sliced
1/4 C pistachios
2 t agave

Directions: Mix all ingredients together and enjoy!

Have I mentioned we’re big fans of Trader Joe’s Dried Pomegranate Seeds?  Well, we are!  And this healthy combo makes a healthy and tasty breakfast.

Ingredients:

1 C cooked oatmeal
1 T pomegranate seeds
1 banana, sliced
1-2 t agave nectar

Directions: Mix agave with oatmeal and garnish with banana and pom seeds. Enjoy!

mOMent: If you could be anyone else for just one day. Who would you be, and what would you do?

fried banana and macadamia

Fried bananas and honey macadamia nuts are possibly one of the most delicious treats that I have ever had. If you’re vegan, substitute brown rice syrup or agave for this recipe.

Ingredients:

1 C cooked old-fashioned oats
1 banana
1/4 C macadamia
3 T coconut oil
2 T honey

Directions: Slice banana in 1/4 inch pieces. Heat 3 T coconut oil in sauce pan over medium-high heat. Saute banana in coconut oil, turning banana when the bottoms turn brown and cooking evenly on both sides.

Using the remaining oil, add 1 T honey and saute the chopped macadamia nuts and saute until browned.

Mix on T honey with oatmeal and add banana and macadamia nuts as garnish, to taste.

I can’t believe I haven’t tried this one before…duh! It’s so good~

Ingredients:

1 C cooked old fashioned oatmeal
1/2 banana
1/3 C fresh blueberries
agave to taste
butter to taste

Directions:

Mash oatmeal and banana, mix in agave and butter.  Garnish with fresh blueberries and enjoy!

This recipe came from vegweb.  The only change I made was adding oats to the mix…of course!  It turned out delicioso, I used walnuts, cinnamon and nutmeg.  A perfect combo.

Ingredients:
3 to 4 ripe banana, mashed (The riper the better!)
1/3 cup vegetable oil
2 tablespoon ground flax seed
3 tablespoon water
3/4 cup sugar
1 teaspoon vanilla
1/4 teaspoon nutmeg & cinnamon
Pinch salt
1 1/3 teaspoons baking soda
1 cup all-purpose flour
1/4 cup whole wheat flour
1/4 cup ground oats
1/4 to  2/3 cup nuts (raw unsalted is best, I like mixing half sunflower seeds, half chopped walnuts)
Additional small handful of seeds/nuts for top of loaf

Directions:

1) Preheat the oven to 350 degrees Fahrenheit.

2) Mix ground flax and water in a small bowl, set aside. Mash bananas in a bowl, add oil and mash a bit more until well mixed. Don’t worry about making it smooth, the bananas should be a little lumpy. Mix in the sugar, flax mixture, vanilla, and spices. Sprinkle the baking soda and salt over the mixture and mix in. Mix in flour and desired amount of nuts (try adding them 1/4 cup at a time.)

3) Grease loaf pan and pour mixture in. Add seeds/nuts to the top of the loaf. I usually use about 1/4 cup.

4) Bake for 45 minutes to and hour. Test done-ness by inserting a butter knife into the loaf. It should come out clean. Cool the bread on a rack to keep the edges from getting soft. ENJOY!

Notes:
- The sugar can be adjusted to taste pretty easily, molasses or other sweetener generally works fine in this recipe, if you’re using liquid sweetener (i.e. molasses) increase the flour a little bit. The dough should be soft and sticky, but still definitely doughy.
- Chocolate chips also make a wonderful addition to this bread, just go easy unless you dramatically reduce the sugar or have an intense sweet tooth to satisfy.
- If you have bananas that are overripe, but not enough time to make bread right now, throw them in the freezer. Not only will they keep a long time, but freezing them intensifies the flavor.

banana and morello cherries

Cherries and bananas make a nice combo, especially if you like different textures in your om of the day…

Ingredients:

1 C cooked old-fashioned oats
1 banana, sliced in half long ways
1/4 C morello cherries
1 T agave

Directions: Mix agave and oats until well combined.  Slice banana and add morello cherries as a garnish…enjoy!

red banana and raisin


I had never had a red banana until this morning when I tried this om of the day.  They taste just like the regular ones!  Mixed with the light flavor of coconut and the added texture and taste of raisins…mmmm, yum!

Ingredients:

1 C cooked old-fashioned oats
1 red banana
1 T raisins
1 t coconut oil
2 t sugar

Directions: Mix oatmeal with coconut oil and sugar.  Top with banana and raisins, if you like to mix your toppings…Go for it!

mOMent: When I feel that a situation is out of my control, and I’m left feeling vulnerable, it helps to close my eyes and let go.  Release the ideas in my mind that tell me I was ever in control in the first place.  What is control to you, and how does it show up in your life?

fried banana and coconut

This recipe is based off of one of my favorite desserts at many Thai restaurants.  It doesn’t get much better than fried banana!

Ingredients:

1 C cooked old-fashioned oats
1 banana
2 T coconut oil
1-2 T honey or agave
1 T shredded coconut

Directions:
Add oil to pan and heat until bubbling.  Add sliced banana to pan and fry for a few  minutes and then flip each piece over.  Fry for a few more minutes, watching carefully so not to burn.

Add oatmeal to bowl, place bananas on top, drizzle with honey or agave and sprinkle coconut on top.  What a treat!

mOMent: Layers of flavor are so much fun.  Deciphering the many levels of one’s mind is even more fun.  When you dig deep, what do you find in your mind?  What do your layers say about you?

Ingredients:

1 C cooked old-fashioned oats
half banana
1/2 C black berries
1/3 C orange juice

Directions:
Simmer berries in orange juice for about 5 minutes or until the juice becomes dark in color and a little saucy.  Add oatmeal to bowl, add bananas and berry mixture.  Enjoy!

nanners two ways

This recipe uses bananas in two ways.  One, smashed into a sweet submission with the oatmeal.  Two, sliced and diced with the walnuts.  Both are combined in a nanner-ific bowl of oatmeal.  Enjoy…

Ingredients:

1 C cooked old-fashioned oats
1 banana (cut in half)
1/4 C walnuts, chopped
2 t grapeseed oil
1 t agave
1/8 t nutmeg
1/4 t cinnamon
salt to taste

Directions:

Cut banana in half.  Smash half of the banana in a bowl.  Cut remaining half of the banana in slices.

Add grapeseed oil, agave syrup and spices to a small sauce pan over medium-low heat.  When mixture is slightly simmering add sliced bananas and chopped walnuts.  Cook over medium-low heat stirring frequently for a few minutes or until bananas begin to smoosh around (that’s a technical term).

Combine oatmeal in the bowl with the smashed banana.  Stir well.  Add banana-walnut mixture and…go bananas!
