apricot ginger cranberry

The best flavors of the season…mmmmm…

Ingredients:

1 C cooked oatmeal
1/4 C orange juice
1/8 C apricot, dried, chopped
1/8 C candied ginger, chopped
1/8 C cranberry, dried chopped

Directions: Simmer all ingredients together until orange juice has soaked into all of the dried fruit. Mix in with oatmeal and enjoy!

orange apricot oatmeal crumble

This was our Christmas dessert, and my om of the day…

recipe adapted from here

Serves 12
2 cups dried apricots, thinly sliced
8 oranges, plus 1 tsp. grated orange zest
1/2 cup raisins
1/2 cup chopped candied ginger
1 cup whole wheat pastry flour
1/3 cup oats
1/2 cup sugar
1/2 tsp. salt
6 Tbs. vegan margarine, softened
1/2 tsp. vanilla extract

1. Preheat oven to 350°F. Coat 9-inch-square baking pan with cooking spray.
2. Cut ends from oranges. Stand 1 orange on cutting board, and slice away peeland pith. Cut orange into quarters; cut quarters into 1/2-inch-thick slices. Repeat with remaining oranges, and transfer to bowl. Stir apricots, currants, and candied ginger into oranges. Spread mixture in prepared baking pan.
3. Stir together flour, oats, sugar, orange zest, and salt in bowl. Rub margarine and vanilla into rice flour mixture with fingers until combined and mixture forms large crumbs. Spread crumb mixture over orange mixture.
4. Bake 30 to 40 minutes, or until top of Crisp is golden brown. Cool 10 minutes; serve warm.

Yes, I know I’m so predictable.  If we have a yummy dessert, it almost always ends up in the om of the day.  This is no exception.  I made this delightful fresh crumble for dessert last night and it was soooooo good, we needed a replay!

Here’s the recipe  for the crisp

Ingredients:

2 heaping spoonfuls of crisp

apricot chili

Who wants spicy oatmeal?  I know…my husband!  He loves the spice and I thought I would test out this recipe on him.

Ingredients

1 cup cooked oatmeal
2 T apricot chili preserves

Directions:  Mix well and serve.  If you like it a bit sweeter, add a little agave.

Who knew that apricot chutney would be so interesting in oatmeal.  It’s sweet, it’s spicy…it’s a different kind of breakfast for sure!

apricot almond

Ingredients:

1 C cooked old-fashioned oats
1/4 C chopped dried turkish apricots
2 T chopped almonds
1 T agave
sprinkle of salt

Mix agave, salt and oatmeal.  Garnish with apricots and almonds…taste the goodness.

apricot lime

This recipe really works well if you enjoy tart flavors mixed with subtle sweetness.  If limes are in season…even better!

Ingredients:

1 C cooked old-fashioned oats
1 apricot
1 lime
1 T sugar
splash of water

Directions:  Chop apricot.  Add juice from one lime and sugar to a pan over medium-low heat, add apricot and let simmer for a while, until apricot becomes soft, plump and the juice becomes thick.  Add to oatmeal and enjoy!

apricot honey

Ingredients:

1 C cooked old-fashioned oats

1 apricot

1 T honey

Directions: Chop apricot into bite-sized chunks. Add honey to oatmeal with apricots, stir and enjoy!

Ingredients:

1 C cooked old-fashioned oats
1 fresh apricot
1 t agave
1/4 t cinnamon
1 t butter
splash of milk

Directions:
Cut apricot in chunks.

Mix butter, agave and oatmeal in a bowl.  Fold in apricot and cinnamon and add a splash of milk if you like your oatmeal a little creamier…
