apple cinnamon oat bars

This is a great recipe that I found in the Whole Foods flyer and I think they’re pretty good.  The only thing that I did differently was that I used a sheet pan and made them really thin…that way they make great sandwiches with some peanut butter in the middle!  Yums!


Ingredients:

2 cups unsweetened almond milk
1 1/2 cup steel cut oats
1/2 cup chopped pecans
1/2 cup raisins
2 tsp vanilla
1 1/2 tsp ground cinnamon
2 (about 1 lb) apples (I used Pink Lady and Gala apples), cored and grated

Directions:
Preheat oven to 350 degrees. Mix all ingredients together in a large bowl. Transfer to a foil- or parchment paper-lined 9″ square baking pan, press down and smooth out the top and bake until firm and golden brown, about 1 hour. Let cool in pan; cut into squares and sere warm or at room temperature.

haroset

What is haroset you ask?  Well I didn’t know either until we happened upon it recently in a delightful store called Wholesome Market.  Haroset is a spread made of nuts and fruit, and the one that we found was made with hazelnuts, apples and dates.  It is soooooo delicious!  What a score.  It’s perfect on toast, oatmeal or even by the spoonful straight to the lips…


Ingredients:

1 cup oatmeal
1-2 spoonfuls of haroset

Directions: Stir together and enjoy!

pear apple butter

We have a few friends who make the most delicious treats.  Yesterday they brought us some homemade pear apple butter and it was so fantastic that we couldn’t wait to put it in our om of the day!  My suggestion…find a few friends who make their own PAB and enjoy this treat.

Ingredients:

1 C cooked oatmeal
2 T pear apple butter

Directions: Mix all together and enjoy…

apple raisin pecan pie

Yeah, pretty much this is the bomb! YUM!


Ingredients:

1/4 C oatmeal
4-5 big apples, chopped
handful of pecans
1/3 C brown sugar
2 T maple syrup
1/3 C raisins
1 t cinnamon
1 pie crust

Directions:

Mix all ingredients in a big bowl and add to pie crust. Bake at 350 degrees for about an hour or until it looks ready to devour…

peanut butter apple pear

 

Ingredients:

1 C cooked oatmeal
1 T peanut butter
1-2 t agave
1/2 apple, chopped
1/2 pear, chopped

Directions: Heat peanut butter and agave in saucepan and add fruit. Add a little water if you need to thin it out a bit at first. Cook over low heat for a few moments until fruit softens.  Mix it in oatmeal and enjoy!

chunky apple pie

Sorry folks, I don’t have a recipe for the apple pie.  I just chopped up about 6 apples, mixed them with a handful of pecans, a handful of brown sugar, a spoonful of cinnamon and a handful of raisins.  I mixed it all together and put it in a pre-made frozen pie crust.  I baked it until it was done, about an hour at 350 degrees.

Ingredients:

1 C cooked old-fashioned oats

1 healthy scoop of homemade apple pie

Directions:  Scoop on top and dig in!

cinnamon sauce, apple and raisin

This is like pie in a bowl. Apple pie with cinnamon and raisins!

Ingredients:
1 cup cooked oatmeal
2 T cinnamon sauce
1 apple diced
1 T raisins
2 T water

Directions: Mix apple, raisins, sauce and water in a saucepan. Simmer over low-medium heat until apples become soft and saturated with sauce. Mix with oatmeal and enjoy!

tomato apple raisin

Along our travels around the county this weekend, we found this tomato-apple-raisin spread that we thought might be interesting in om of the day.  I have to admit it’s a little weird, but if you like tomatoes then you’ll like this.  It’s sweet and salty and a little chunky!

Ingredients:

1 C cooked oatmeal
2 T tomato apple raisin spread

Directions:

Mix spread with oatmeal and enjoy!

mOMent: The phrase ‘take it with a grain of salt’ always interested me because it implies that one should maintain at least some level of skepticism.  Being skeptical can help you maintain a balance of your own truth and the ideas others would have you believe.

apple vanilla syrup

I used what I had on hand, and it turned out super yums!

Ingredients:

1 C cooked old-fashioned oats
12 oz apple juice
zest from one lemon
1 t vanilla extract

Directions:

For apple syrup: simmer apple juice and zest for a few minutes, then add vanilla.  Continue to simmer until the juice becomes thick and syrup-like.  Feel free to strain lemon zest, although I enjoy the taste and texture of it.

Mix oatmeal and apple vanilla syrup to taste, enjoy!

Ingredients:

1 T dry old-fashioned oats
1 t cinnamon
1/4 t nutmeg
1/2 t grapeseed oil

Directions:
Saute oats in grapeseed oil until just toasted, add cinnamon and nutmeg.  Add to a sliced apple…delish dessert, and healthy too!

Ingredients:
1 C cooked old-fashioned oats
1/4 C caramel sauce
1 large apple

Directions:
Peel and chop apple.  Add caramel and apples to a saucepan and heat thoroughly.  Heat until the caramel becomes liquid and the apples simmer for about 10 minutes or until they are tender.  Add mixture to oatmeal and enjoy.
