Ingredients:

1 C cooked oatmeal
1 mango
1 tangerine

 

Directions: chop mango and juice tangerine. Add to small saucepan and heat gently over medium-low heat until mango is plumped with tangerine juice. Add to oatmeal and enjoy.

I think one of my favorite combos is peanut butter and coconut, and what makes that better?  WHITE CHOCOLATE!

1/4 C frozen shredded coconut

pear apple butter

We have a few friends who make the most delicious treats.  Yesterday they brought us some homemade pear apple butter and it was so fantastic that we couldn’t wait to put it in our om of the day!  My suggestion…find a few friends who make their own PAB and enjoy this treat.

Ingredients:

2 T pear apple butter

peanut butter muffins

Well, this was a pleasant surprise!  I have a new-found love for this recipe which happened by mistake.  I was scouring the internet looking for a recipe for peanut butter bread…there aren’t that many.  Don’t ask me why I was so fixated on finding a recipe for such a thing, I just get it in my head sometimes and I can’t let it go.  I found this recipe and decided to veganize it.  And then I realized that I had misplaced my bread pan… So it became a muffin recipe!

Makes 12-14 muffins

Ingredients:

1 1/2 C all purpose flour
1 C oats
1 C sugar
1 T baking powder
1/2 t salt
3/4 C peanut butter
1 T ground flax (heaping) plus 3 T non-dairy milk (I used Rice Dream Horchata)
1 C non-dairy milk (I used Rice Dream Horchata)
1 t vanilla

1. Heat your oven to 350 degrees and line your muffin tins.
2. Mix flax and horchata in a small dish and let gel up.
3. Grind oats in a food processor (I used the Magic Bullet), or use quick cooking oats.
4. Combine flour, oats, sugar, baking powder and salt. Add peanut butter until crumbly.
5. Combine the flax mixture, horchata and vanilla in a separate bowl and then add to dry ingredients until just moistened.
6. Fill muffin tins 3/4 full and bake for 35-40 minutes or until a toothpick comes out clean.
7. Let cool for at least 5 minutes, if you can stand it.

Serve with fresh preserves and enjoy the PB&J muffin experience!

apricot ginger cranberry

The best flavors of the season…mmmmm…

Ingredients:

1 C cooked oatmeal
1/4 C orange juice
1/8 C apricot, dried, chopped
1/8 C candied ginger, chopped
1/8 C cranberry, dried chopped

Directions: Simmer all ingredients together until orange juice has soaked into all of the dried fruit. Mix in with oatmeal and enjoy!

peanut butter chocolate pretzel

I made some chocolate covered pretzels the other day and they were a big hit! I just melted some chocolate, mixed in the pretzels and sprinkled with slivered almonds. Go for it! It can be fun to play in the kitchen without recipes…I dare you!

Ingredients:

1 C cooked oatmeal
1/4 C chocolate covered pretzels, chopped
3 chocolate covered pretzels for garnish
1 T peanut butter

Directions: Mix chopped pretzels and peanut butter with oatmeal. Garnish with remaining pretzels, enjoy.

fresh frozen coconut and guava

Ingredients:

1 C cooked old-fashioned oats
1/2 C guava juice
¼ C fresh frozen coconut

Directions:

Mix all ingredients together and simmer over medium heat.  Simmer until coconut absorbs most of the guava juice and add to oatmeal.  Enjoy!

sukhi’s mint apple & ginger chutney

I do have to admit. This one is a little weird. If you like spicy, sweet and savory concoctions you may enjoy this. Otherwise, use this chutney on a samosa instead.

fresh frozen coconut and candied ginger

Having fresh frozen coconut in the freezer has proven to be quite a delicious treat. It’s so easy to add to any recipe to kick it up a notch and add a level of complexity and richness that only coconut can provide.

Ingredients:

1 C cooked oatmeal
2 T candied ginger, chopped
1/4 C frozen coconut
1/4 C water
2 T agave

Directions: Simmer ginger, coconut, water and agave until warmed and the flavors mingle. The mixture will become thick as in the picture.

cinnamon almond

These great little treasures were quite a find at Trader Joes. I’m sure I could have made my own, but it is so much easier sometimes to let others do the work, right?

Ingredients:

1 C cooked oatmeal
1/4 C cinnamon almonds
1-3 t sugar or agave
1/4 t cinnamon

Directions: Chop cinnamon almonds and mix half of them with other ingredients. Sprinkle the rest of the almonds on top…enjoy!

We love our little spice shop here in our local town. And, they have pomegranate molasses! Try this and get ready to have your senses expanded…It’s quite flavorful.

blueberry craisins

I was delightfully surprised this morning when I saw these samples at the gym. I wouldn’t normally purchase craisins but I thought, what the heck?! And hey…it was pretty yummy too!

Ingredients:

1 C cooked oatmeal
1 100 calorie bag of blueberry craisins
1 t agave syrup (or more to taste)

Directions: Mix it all together and have a wonderful breakfast.

peanut butter coconut oatmeal cookies

So this recipe is slightly adapted from Vegan Cookies Invade Your Cookie Jar.  I added about 1 cup of coconut flakes instead of the peanuts and used Rice Dream Horchata for the milk.  They turned out Dy-No-Mite!
