blueberry verjus & coconut milk

Coconut milk must be from the heavens above.  Rich, creamy and well, coconutty :)   Please enjoy this… we did!

Ingredients:

1 C oatmeal
2 T (or more) blueberry verjus reduction
2 T coconut milk
a dash of salt

Reduction:

1 C blueberries
1 C sugar
1 C Navarro Verjus


Directions:  Simmer sugar blueberries and verjus for about 20 minutes (or longer, depending on how saucy you like your reduction).

Add reduction and coconut to oatmeal and mix well.  Sprinkle with a little salt and voila!

mOMent:  Being perfect is an oxymoron.  We are already perfect, it’s just a matter of remembering… Who is a model of perfection in your life?  Who do you look up to?  What qualities do they have that you also have?
